Frittata Florentine

1/4 red onion, chopped
1 clove garlic, minced
1 tablespoon (15 mL) olive oil
2 plum tomatoes, diced
1 red or green pepper, diced
Large handful of spinach or arugula, chopped
1/2 cup (125 g) frozen sweet corn, thawed
8 eggs, beaten
Grated Parmesan cheese

Directions
1. Preheat oven to 350°F (180°C).
2.In a nonstick, ovenproof skillet, cook onion and garlic in a tablespoon of olive oil over medium heat.
3. Add tomatoes, sweet pepper, spinach, and corn; sauté for a few minutes. Add beaten egg mixture to skillet and cook until just set.
4. Sprinkle with cheese and bake until light golden.
5. Serve with a green salad.
