Ingredients
2 medium-sized beets (or 3 small)
1 19 oz can of chickpeas (drained)
Juice of 1 ½ lemons (add more if you like tangier hummus)
5 cloves of garlic
½ tsp sea salt (or more, to taste)
¼ cup olive oil
¼ cup water
Directions
1. Cook beets to your preference, baking in the oven gives the best flavour.
2. In a food processor add all ingredients and blend until smooth. Taste and
add more salt if needed.
3. Serve with vegetable sticks, rice crackers, pita chips or fresh bread.
