Rotini with Three Peppers and Herbs

Ingredients
1/4 cup extra-virgin olive oil
2 cups sliced white onion
2 sprigs fresh thyme, divided
1 (14.5 ounce) box Barilla PLUS® Rotini
1 cup diced green bell pepper
1 cup diced red bell pepper
1 cup diced yellow bell pepper
10 leaves fresh Italian parsley, chopped
salt and black pepper to taste

Directions
1. Bring a large pot of water to a boil.
2. Heat olive oil in a large skillet over medium-high heat. Add onions and 1 sprig of fresh thyme. Saute 5 minutes.
3. Cook pasta according to package directions.
4. Add peppers and water to skillet, season with salt and pepper. Saute an additional 10 minutes or until peppers are tender.
5. Drain pasta, add to the skillet, and toss. Sprinkle with remaining thyme, chopped parsley and serve.
