Easy Grilled Pork

1 pork tenderloin fillet
oregano
salt & black pepper
olive oil

Directions
1. Preheat a grill pan or a barbecue grill to a medium-high heat.
Trim the tenderloin of any excess fat. Cut the fillet into 2.5 cm thick slices (about 1 inch).
2. Press the medallions with your hand to flatten them slightly.
3. Brush both sides of the medallions with olive oil and season each with oregano, black pepper and salt.
4. Place the medallions on the grill and cook each side, turning just once until it’s cooked to your liking (see notes below for timings).
7. Put them in a plate and cover in foil. Leave them for a few minutes to rest before you eat them, this will make them really juicy and tender.

Cooking times: Rare – 1-2 minutes each side; Medium – 2-3 minutes each side; Well done – 3-4 minutes each side.
