Brewing was already well underway when I caught up with Glasstown Brewing Company’s Head Brewer, David Draper. It was just after 8 a.m., but he had been on the job for hours, tending to the first stage of a dry hop sour beer and keeping the brewhouse humming.
In between steps, David shared that Glasstown has just introduced a new apple‑blueberry cider, now available on tap. It’s a fresh addition to a lineup he has been shaping since the very beginning. Before brewing, David worked as an IT manager, but a career change led him to the UC Davis Brewing Program in California. As Glasstown’s head brewer, he has been helping build the brand from the ground up.
He explained that beer sales have really taken off. In the early days, customers often came in looking for mass‑produced beer, something Glasstown has never aimed to replicate. Over time, the community embraced the brewery’s craft‑focused approach, and today Libby Lager stands as their top seller. The kitchen has joined in on the creativity too, using different beers in several dishes. One favourite remains the wood‑fired pretzel served with beer cheese and grainy mustard.
Also new to the drink menu is Session IPA, a low-alcohol beer designed for easy sipping without sacrificing flavour.
