1/2 cup Water chestnuts, chopped
2 Green onions, chopped
1 tsp Orange zest
1 tsp Freshly grated gingerroot
3 tbsp Sweet soy sauce
2 tsp Sambal Oelek
1 tsp Cornstarch
1 lb (30 pieces) Wonton wrappers
3 cups to 4, Peanut oil for frying

Directions
1. Combine chicken, water chestnuts, green onion, orange zest, ginger, sweet soy sauce and sambal oelek in a medium bowl. Whisk cornstarch into 1/3 cup (80 mL) of cold water in a small bowl and set aside.
2. Assemble wontons one at a time by placing a 1 tsp (5 mL) of chicken mixture in the center of each wonton wrapper. Using a pastry brush, lightly brush the edges of the wonton wrapper with cornstarch mixture. Fold the wonton around the filling to create a triangle and press the edges to seal. Place on a baking sheet and cover with a damp towel to prevent drying out. Repeat with remaining wontons.
3. HEeat oil in a large pot or deep fryer over medium-high heat to 350°F (180°C). Reduce heat to medium and maintain temperature. Working in batches, fry wontons until golden brown and crisp on both sides, about 2-3 minutes. Serve with Asian dipping sauces.
