The Stubby Goat opens in downtown Wallaceburg

A brand new restaurant has opened up in downtown Wallaceburg.

Thanks to the determination and dreams of two lifelong friends, The Stubby Goat is now open for business.

“This was our goal and our dream since we were both 20 or 21,” said Jason DeBuck, who owns the business along with Aaron Gauthier.

“We both went to Fanshawe College and we decided that one day we wanted to open up a middle class restaurant in Wallaceburg, Ontario to give the town something new, the people something new. Fresh ingredients, homemade food that we enjoy eating and cooking for people.”

The Stubby Goat is located at 153 Nelson Street, the location of the former Chez Denise Bistro and Cafe.

Both DeBuck and Gauthier were born and raised in Wallaceburg and both took the culinary management program at Fanshawe.

DeBuck said the vast majority of their menu is made from scratch.

“Everything is, 90% home cooked from scratch food,” he said.

“The menu is basically things that we like to eat. I’ve liked to cook for people over the years, so I have a few things on the menu my family has liked for a while. I took an old recipe from my grandma from Russia, those were her cabbage rolls.”

Debuck added: “Aaron put on the menu a sandwich that is the ‘Sloppy Klaus.’ It’s an homage to one of his former chefs as well. It’s our version of a Sloppy Joe. It’s chicken and a paprika sauce. It’s like a curry sauce, but a bit spicy.”

Debuck said The Stubby Goat will feature theme nights starting next week.

“Starting on Monday night, that will be our pizza night,” he said.

“That’s going to be our designated night. You can’t get it any other day throughout the week. Only on Monday night. Tuesday night next week I believe we are doing pasta night. The following Tuesday night we are going to do rib night and the following Tuesday we are going to do prime rib. So every Tuesday it will be something different. Try to find three or four that we like and continuously run it every three or four weeks.”

Debuck said Wednesday’s will be ‘Senorita/Ladies’ night.

“Cheaper appetizers, shrimp taco bowl and $4 Coronas, $5 margaritas and $5 what we call, our house special, is tank grenades,” he said.

Their late night appetizer menu runs from 9 p.m. to 11 p.m. every night.

“They have our arancini chicken and leek fritters, chicken fajitas and empanadas and beurre blanc shrimp on it as well,” he said.
