Sunshine Farms

One of our favourite things about the warmer months is SALADS!!! We HAD to share this one!!!! 😋 Especially because our Pickled Beets would be the STAR in it 🤩
Pickled Beet Salad with Feta and Walnuts YUM! (Serves 5 people)
2 jars Sunshine Farms Pickled Beets
1 package Spring Greens, or Salad Mix of your choice
½ cup Feta Cheese Crumbles
1 cup unsalted Chopped-toasted Walnuts (or any favourite nut)
¼ cup Olive Oil
2 Tbsp. Balsamic Vinegar
1 Tbsp. Dijon Mustard
2 cloves Garlic
¼ tsp. each Kosher Salt & Pepper
Pour the 2 jars of Sunshine Farms pickled beets into a strainer and drain to get rid of the excess liquid.
Chop the drained beets into generous bite size pieces.
Pour a package of chopped or mixed greens into a large mixing bowl.
Pour the balsamic vinaigrette dressing over the greens and toss to coat.
Add the chopped beets and carefully mix them into the salad.
Add the cooled toasted walnuts and ½ cup of feta cheese crumbles. Carefully toss until combined.
