FEATURE FRIDAY ! – Linda’s Perogies and Greens

Ingredients:
1/2 a bag of no name perogies
10 sprigs of asparagus
4 big leaves of kale
1/4 cup of water
2 Tbl extra virgin olive oil
1/2 cup of Ranch Dressing
1/2 cup of shredded marble cheese
Directions:
1. In a medium pot filled half way with water – bring to a boil.  Put perogies in the boiling water.
2. Meanwhile in a frying pan heat 1/4 cup of water on medium – high heat with bite sized pieces of asparagus and chopped kale. Put a pan lid over this to steam veggies for 5-7 min then set aside on a plate.
3. When perogies are soft, drain.  In the pan you used for the veggies heat the 2 tbl of oil med-high. When oil is hot put in perogies. Let sizzle on one side for 2 minutes then the other.
4. Add Ranch Dressing at the end of cooking and stir till all perogies are covered.  Place perogies on top of greens and sprinkle with grated cheese. Serve with a side of ranch or plain.
