Granola Bars

1 cup pitted dates
1½ cups old-fashioned oats
1 cup almonds, chopped
½ cup chopped dark chocolate
½ cup unsweetened shredded coconut
¼ cup dried cherries
¼ cup honey
¼ cup creamy salted natural peanut butter

Directions
1. Line an 8-inch-square baking dish with parchment paper.
2. In a food processor fitted with a metal blade, process pitted dates for 1 minute.
3. Transfer to a bowl. Add oats, almonds,dark chocolate, coconut and dried cherries.
4. In a small pot, warm honey and peanut butter over low heat.
5. Pour over oat mixture, mixing well.
6. Transfer to prepared baking dish. Cover with plastic wrap and freeze until firm, about 10 minutes.
7. Remove from pan and slice into 10 bars. Store in an airtight container up to 5 days.
